Farm to Feast - OMGazpacho!!!

Gazpacho This gazpacho recipe is super fresh, with ingredients easily found at either the farmer’s market or the grocery store. And it is incredibly easy to make. No oven required!!

This is perfect for a summer party, as it is best served room temperature. Try serving in shot glasses. A bit of poached lobster or crab would be a nice addition, if you’re feeling fancy.

(Makes 8-10 servings)


6 Large Heirloom Tomatoes (any variety), diced 1 1/2 red bell pepper, diced 1 1/2 yellow bell pepper, diced 1 medium red onion, diced 3 cloves garlic, minced 1/4 cup cilantro, rough chopped 1 lemon, juiced 3 tbsp red wine vinegar splash of Tabasco sauce kosher salt, to taste pepper, to taste 3 tbsp - 1/4 cup olive oil (how much you use is up to personal preference)

Combine tomatoes, red & yellow peppers, onion, garlic and cilantro in a (very) large bowl. Add lemon juice, red wine vinegar, Tabasco sauce, salt and pepper. Using a hand blender (I absolutely LOVE my Bamix hand mixer—it is the BEST!), puree to the desired consistency or, working in batches, blend in a blender. With the motor running, add the olive oil.

Serve in large bowls, garnished with cilantro.
