Lunch Duty

I'm back in the saddle! Lunch making has commenced, thanks to good old school being back in sesh. I do nothing in the realm of Pinterest-ready lunch boxes, but I do make four kids lunch on all of the school days. Looking back, I can see I was in kind of a rut with the lunches and so I'm trying to mix it up a little bit this year. I have four kids, and no one likes the lunch you can buy at school. I am a woman of many talents, but I can't fix that problem. I can fix lunch though! First thing I did was splurge on some new lunch boxes and containers when they first put them out at Whole Foods back in July. Everyone thought I was crazy, but there's just a few adorable if mismatched items available there now, and they are suitable for toddlers. I got [amazon_textlink asin='B06XXL6Z84' text='these freezable bags' template='ProductLink' store='amadsrea-20' marketplace='US' link_id='02326b11-9343-11e7-8f2f-931cc96db9d7'], which I love. You put them in the freezer at night and the bag keeps everything refrigerated all day.

I also picked up a few [amazon_textlink asin='B01A0EHXWI' text='metal food container' template='ProductLink' store='amadsrea-20' marketplace='US' link_id='4b8e7a61-9343-11e7-99e5-4d46082aab0e']s (not plastic = dishwasher safe, not glass=lightweight) and [amazon_textlink asin='B01KRA981E' text='reusable zip top bags, which I think are genius. I did pause as I put something crumbly  in one, wondering if I'd wind up cursing the' template='ProductLink' store='amadsrea-20' marketplace='US' link_id='08ae9e39-9344-11e7-afc1-8de8c681c1e7']m forever as a new pain-in-the-butt hand washable curse I brought upon myself. I'll let you know how that goes!

We still had four reusable water bottles from last year (out of approximately 500 purchased), which was great! We have a few [amazon_textlink asin='B00SA2ZB1S' text='Klean Kanteen' template='ProductLink' store='amadsrea-20' marketplace='US' link_id='1e07db3d-9344-11e7-9373-c1ca321231f1'] metal ones, and one [amazon_textlink asin='B004C3LMCG' text='glass with the silicone sleeve' template='ProductLink' store='amadsrea-20' marketplace='US' link_id='74b6691c-9344-11e7-aba1-b1ed5bd7aaf2']. Some people like their water from glass. So those have been pressed back into service.

So with some new equipment and some MVPs back in the mix, I was happy to make lunch this morning (I even made one last night! My daughter was making hers -- trying valiantly to get me to help by saying "How do you get the turkey rolled up so perfectly?" loudly as I was in the next room watching tv. Well played. I did let her finish her own, but I joined her to make my son's lunch so he'd be ready to ride with her to school in the very early morning.)

So, yeah, turkey rolls. I got some sliced turkey, remembering this time to avoid the one that has carrageenan because it's bad for you. The one I did get used potato starch in place of the carrageenan (I think they both serve as thickeners, which is weird to have in your sliced turkey, but everyone can eat potato starch and I haven't heard anything bad about that. Yet.) But maybe carrageenan makes turkey easier to roll because I also had trouble rolling it up.

That was protein for two of the kids, then I had a four section container to fill, so everyone got baby carrots, grapes, sliced red peppers and either plantain chips for the gluten free kids (two of mine have a sensitivity) and something we call salty crackers for the other two. My oldest packed herself some chopped lettuce, which I would never have thought to do in high school, but I think it's a good habit to have. My younger kids saw that Whole Foods has stocked up on the "School Safe" snacks, which is a nut free brand that is also delicious. They make little logs flavored like banana bread, chocolate chips or brownies. It is kind of weird putting that in there, since one of the kids had a Peanut Butter and Jelly Sandwich, so we were not so nut free really.

We'll see how it went when the kids return from school. I expect to have some food come home untouched and others completely picked clean. I see it as a chance to recalibrate for the following day and also know who is going through a growth spurt!
