Farm to Feast: Lazy Breakfast Bake


I stumbled upon this years ago when trying to figure out how to not interrupt opening presents on Christmas morning to make my kids something to eat. It's great for a crowd, or to nibble on throughout the day.


1 large challah, cut in half and sliced into 1" thick slices

6 eggs

3 cups milk

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

2 tbsp vanilla extract

1 cup packed brown sugar

1/2 stick butter (plus more for greasing the pan)

1/4 tsp salt

1 pint fresh blueberries


Grease a 9 x 13 inch pan. Preheat oven to 350°.

In a large bowl, whisk together the eggs, milk, cinnamon, nutmeg and vanilla.

Layer the challah into the dish. Pour the egg mixture over the challah.

Sprinkle the brown sugar over the mixture. Cover and refrigerate overnight.

Preheat the oven to 400°.

Melt butter with the remaining brown sugar until melted and combined.

Sprinke blueberries on top of bread mixture and then pour the butter mixture on top.

Bake for 20 minutes.

*You can also cook your bacon in the oven at the same time. Line a rimmed baking sheet with foil. Place a cooling rack on top. Lay bacon slices on the rack for 20 minutes or until bacon is at your preferred level of doneness.
