Farm to Feast: Snowy Day Chocolate Peanut Butter Blondies
Mid-way through the snow day this week, I felt the overwhelming need to bake something. I looked around the pantry to see what I had, and came up with this! You can substitute any kind of chips, or add nuts, whatever makes your gang feel warm and cozy inside.
2 cups all-purpose flour
1 tsp baking powder
1 tsp salt
2 sticks unsalted butter, melted
2 tsp vanilla extract
3/4 cup granulated sugar
3/4 cup brown sugar, packed
1 cup chocolate chips
1 cup peanut butter chips
Preheat oven to 350°.
Grease a 9 x 13 inch baking dish.
In a large bowl, mix butter, sugars and vanilla. Add eggs and mix well.
In another bowl, stir together the flour, baking powder and salt. Add to the butter mixture and mix well. Fold chips in to mixture.
Spread along the bottom of the dish. You can use your hands to push it down and make it even, or use a spatula. Sprinkle with sea salt.
Bake for 30 minutes or until the edges are slightly browned and a toothpick inserted in the middle comes out clean.
Enjoy with ice cream!
