Farm to Feast: Chicken Milanese

I first discovered this dish about ten years ago and have played with it continually to try to get it just right. I think it's pretty close and I'm so happy to share it with you. I like to add a bit more flavor to my bread crumbs other than what the package offers. Feel free to season your own way!



1 1/2 lb thin chicken cutlets

2 cups Italian bread crumbs

2 tbsp grated parmesan (preferably fresh)

1 tsp italian seasoning

1/4 tsp kosher salt

1/4 tsp freshly ground pepper

4 large eggs

Canola oil

Spring Mix

2 tomatoes, cut into chunks

1/4 red onion, cut in half and then sliced thin

1/4 cup roasted red peppers, chopped

Kalamata Olives


1/4 cup Extra Virgin Olive Oil

2 tsp fresh lemon juice

1 garlic clove, minced

1 tsp dijon mustard

a pinch of sugar

1/4 tsp fresh oregano

Kosher salt & freshly ground black pepper, to taste


To make the dressing:

Whisk together all ingredients until emulsified. Season with salt & pepper to taste.

For the chicken:

Preheat the oven to 350°

Set up two pie dishes. In one pie dish, beat the four eggs. In a second pie dish, combine the bread crumbs, parmesan, and seasonings.

Heat canola oil in large skillet until it sizzles, but not too hot that the oil begins to smoke.

Start your assembly line right next to to your pan...first egg mixture, then bread crumbs, then pan.

Pat chicken dry before beginning.

Begin dredging your chicken cutlets in the egg, then the bread crumbs, shaking off the excess. Then return back to the egg mixture and then one more round of breadcrumbs.

Place in the pan and get it nice and brown and crispy.


Place cutlets on a foil lined baking sheet as they are done frying.

Repeat until all cutlets are fried. You will most likely need to add more oil as you go. Make sure it is hot enough before putting in your chicken.

When it's all fried, place baking sheet with chicken in the oven for 10 minutes. Depending on the thickness of the cutlet, it may need up to 5 minutes more.

While it's baking, prepare your salad on your plates.

Once chicken is done, remove and place right on top of your salad. Drizzle with dressing. Enjoy!!
