Farm to Feast: Banana Chocolate Chip Muffins
If your house is anything like mine, you returned home from spring break with a bunch of overly ripe bananas. Well, when life hands you brown bananas,...make banana muffins! These are great any-time-of-year, pop-in-the-lunchbox snack for your little monkeys!
4 over-ripe bananas
1 1/2 cup all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 stick butter (1/2 cup) melted
1 cup sugar
2 tsp vanilla
Preheat oven to 350°.
In a large bowl mash the bananas (I use a potato masher--it works perfectly). Add the butter, eggs, sugar and vanilla. Stir until combined.
In a medium bowl, mix together the flour, baking soda, baking powder and salt. Add to the banana mixture and stir until incorporated. Add the chocolate chips (you can also add walnuts, peanut butter chips, white chocolate chips--whatever your kids prefer!)
Scoop 1/4 cup scoopfuls into lined muffin tins.
Bake for 10 minutes, then rotate the muffin pan and cook for another 5. Cook until golden on top and a toothpick inserted into the middle comes out clean.
Enjoy for breakfast, snack or whenever!!
