Farm to Feast: Peach-Blueberry Cobbler
Peaches and blueberries are everywhere these days. I love a nice cobbler or crisp with some good vanilla ice cream.
5 large peaches, peeled and sliced
1 pint blueberries
1/2 cup granulated sugar
1 tsp vanilla
1/4 cup all-purpose flour
1/2 tsp grated lemon peel
2 tsp fresh lemon juice
1 cup sugar
1 cup flour
8 tsp butter, melted
Preheat oven to 350°.
Layer the peach slices in an oval baking dish. Add blueberries. Sprinkle sugar, flour, vanilla, lemon peel and juice. Mix.
In a medium bowl, combine the butter flour and sugar and mix until clumpy. Clump with fingers and sprinkle over the fruit.
Bake, uncovered in the middle of the oven for 25 minutes or until top begins to brown.
Let rest and serve a la mode!
